I just wanted to take a minute to highlight the progress I have made with trying new cheeses in the past few years. Although I haven’t had a post for each new cheese I tried I have made enormous progress in this food group. I went from eating only the orange Singles American cheese slices to now being able to order a cheese plate in most restaurants and being willing to try various different types of cheese.
I remember the first time I tried the white Singles American cheese slices instead of the orange Singles American cheese slices and how completely nervous, anxious and scared I was. I still feel that way whenever I try new foods but if I can go from only eating American cheese to all the many I have tried now that I might have a real chance of expanding my diet even further in other food groups.
I mention this because I had a grilled cheese last week that had cheddar cheese, Swiss cheese, and (believe it or not) pepper-jack cheese on it. I never would have ordered this grilled cheese 5 years ago. I used to not even be able to eat a grilled cheese with just cheddar cheese on it instead of American cheese. The pepper-jack cheese was very new for me and I think it is pretty spicy cheese and had to drink a lot of water with it. It is not something I would prefer to have on my sandwich but at least I tried it.
In regards to the various cheese plates I have tried, I am surprised to find out that I have grown to enjoy very creamy brie cheeses, Parmesan cheeses, and various mild to sharp cheddar cheeses a lot as well. No one is more surprised by this than I am especially when I think back to where I was a few years ago. I know I still have a lot of work to do but it gives me hope that I can change and just maybe might have a newly expanded diet in the future.
