Fried Egg on toast, Bacon and Sweet Potatoes

So I kind of made a sweet potato hash for breakfast (once I finally realized what the sweet potatoes looked like and where they were in the store haha) and it turned out really good!  (In case you are wondering they are weird shapes instead of the usual round potatoes I am used to.)

The way I cooked the sweet potatoes they were nice and soft on the inside and still crisp and crunchy on the outside.  I cooked the bacon and then threw the sweet potatoes into the bacon grease leftover in the pan and cooked them for about 5 minutes.  Then I threw some water in the pan and put a lid on top to steam them for another 6 minutes or so.  Once they were soft I took the lid off and cooked them some more until they got nice and crispy for another 7 minutes or so and seasoned them with a bit of salt and pepper.  They tasted great and were nice and sweet and I put just a little bit of salt on them.

This needs to become something I bring into my diet more not only because they taste good but because they are also super healthy for you.  Sweet potatoes are not only high in vitamin C, D and B6 but they also contain iron and potassium and magnesium.  So what that means is they help strengthen our eyes, bones, and teeth, keep our skin young looking and help with digestion, increased energy and relaxation, and overall just help with a healthy immune system!
