Chicken Cutlets and Pan Fried Asparagus

20170328_180659.jpgSo I am really starting to get the hang of this whole cooking thing!  I am trying to still incorporate some of the things I have tried into my diet and so for dinner tonight I made chicken cutlets and pan fried asparagus.   They both turned out quite good.  The chicken cutlets are crunchy and flavorful on the outside with the seasoning and cooked well on the inside.  I actually tried cutting the chicken into the cutlets myself this time and wasn’t exactly sure how to cut it to get to the even thinner pieces.  So they weren’t exactly even but was still able to cook them all well.  The chicken is moist and the seasoning was a combo of salt, pepper, Mrs. Dash, and garlic which worked quite well.

20170328_180848.jpgSo I cooked the asparagus differently than I did last time by I cooking it in the same frying pan that I cooked the chicken in so it already had the garlic in the pan.  The asparagus is more tender and softer than the last time I cooked it because it is not as crisp.  You can taste the butter, olive oil, garlic, and salt and pepper on the outside and this also makes it slick with the butter.  I could actually smell the asparagus smell when it was cooking this time.  When you take a bite it can be kind of stringy and you have to get all the way through the pieces.  It is interesting that the it tastes a little bit different at the top of the asparagus compared to the bottom.  It is also still weird to me that the outside texture is different.  The asparagus flavor definitely came through without being bitter even with the butter, olive oil salt and pepper on the outside.

So there you have it, another full meal for dinner with just a meat and a vegetable!  Pretty amazing!
