Chicken with Peppers and Onions

“What should I eat for dinner?”

How many of you have also asked yourself this question a million times?  Up until now I never had to think about it that much because I pretty much always ate the same thing for dinner.  Now I am challenging myself with figuring out how to incorporate some of the new foods into my diet.  I have done pretty well with breakfast but am still struggling to figure out what works best for lunch and dinners.  I have tried a lot of new foods but what can I cook and eat on a consistent basis?  For breakfast, I am at the point where I no longer eat plain cheerios for breakfast but instead can rotate between:

  • scrambled eggs and toast
  • fruit smoothies, and
  • avocado toast.

For lunch, I am still not sure what would work best and have used a lot of lunches as opportunities to try new foods at restaurants so I am not sure what to make myself for lunches.  Same thing goes for dinner, I have tried a lot of new things for dinner but on a regular basis so far have mostly incorporated:

  • baked potatoes
  • pizzas, and
  • different pasta dishes.

So I am still trying to figure out how to really add in some of these other foods like chicken, fish, steak or ground beef on a regular basis.  Would love to know any healthy foods with easy recipes that you all would suggest?

So how did it turn out?

So for dinner tonight I decided to try making a chicken dish and made chicken with red and yellow peppers and onion.  I had a couple things that were a little different from the recipe like less chicken than it had and more peppers.  I was doing really well with the recipe until I added too much chicken broth.  Ooops.  I was supposed to put in 3/4 cup of chicken broth and instead put in 1 and 3/4 cup!!!  Oh well.  I just wound up pouring some of it back out and cooking it for a little longer than it really called for to try and correct.

The peppers and onions turned out pretty well, a little on the sweet side, softer in texture and flavorful but without as much of the crunch left.  The chicken breast I was worried about if it needed to be cooked a little longer because it is so thick on one side compared to the other but overall I think it cooked just fine.  I still get that stick to your teeth type texture when eating chicken like this without the crunchy outside part like in some other dishes like the chicken cutlets.  For taste of the whole dish there was mostly the taste from the broth with more of the chicken broth flavor than I would like.  For texture, it is a little bit wetter than I would prefer and again I think part of that is from too much chicken broth.  It all winds up being a very soft dish with the soft peppers and onions and soft chicken.  For the temperature it is all warm and heated through which is good.  Overall, I think it turned out alright but would be interested to make it again without so much of the chicken broth and with cooking the chicken a little more upfront and the onions and peppers a little less upfront so they stay a bit crunchier and see how it would turn out.  Also it took me way longer than the 30 minutes it is supposed to take because I had to defrost my chicken and it took me longer to cut up all the peppers and onions and everything but I think I could do it much quicker the next time.  I will let you all know how it goes when I try it again!
