Chicken Cutlets and Mashed Potatos

I cooked chicken cutlets and mashed potatoes on my own!  I made chicken cutlets once before with help from my family but hadn’t made them on my own yet and so I am glad to say they that now that I cooked them on my own they turned out really well.  Very crispy and crunchy on the outside with good seasoning and soft and cooked well on the inside.  A lot of the flavor you really get from the added ingredients in the breadcrumb mix on the outside of the chicken.  For this batch of the breadcrumbs I added salt, pepper, garlic powder and Mrs. Dash and cooked them with some garlic pieces in the frying pan.  I was worried about not cooking the chicken enough but there is no pink on the inside so it looks good.

I also made mashed potatoes again and this batch turned out much better than the first time I had attempted making them.  Having a potato masher really does help a lot haha.  Also I can see how you really can add as much butter, milk, salt and pepper as you want to make them creamier and more flavorful (and also probably not as good for you but that’s ok).  I cooked the potatoes in boiling water for about 20 minutes and these mashed potatoes are much smoother after giving them a good mashing!

  1. I am so happy about this one since I grew up with my parents making this meal all the time. It is my comfort food and one of my favorite meals. You can do cutlets with thin beef strips as well. Both variations are lovely! So glad you enjoyed this one!
